How to choose GN pans and matching lids

Check GN footprint, pan depth, material and lid design together. Confirm the equipment fit and exact sales unit before ordering pans or covers.

How do you choose a GN pan and lid?

Match the GN footprint, pan depth, material and exact lid design to the equipment and task. Check the manufacturer’s dimensions and compatibility details for both parts. A shared GN size label does not, by itself, confirm a sealed fit, usable capacity or suitability for heating.

What does GN 1/1 tell you?

GN 1/1 identifies a rectangular format commonly specified as 530 × 325 mm; Bartscher’s referenced GN 1/1 container publishes those dimensions. The format does not tell you the pan’s depth. Record all three dimensions when checking a refrigerator, preparation well or rack.

Read fractional sizes from the product drawing or specification. Do not halve both dimensions of a full-size pan to work out a half-size purchase. Keep the supplier’s stated dimensions with the order.

Why does depth matter separately?

Check the space below the supporting rim, the equipment’s allowed pan depth and any clearance needed for a lid or handle. List the portioning and replenishment routine so you can compare the stated working capacity with the task.

A litre figure and an external footprint answer different questions. Ask how capacity was measured, and confirm any tray rails, support bars or adapters required for the intended arrangement.

Will any lid of the same size work?

Check the pan range, rim design and lid style as well as the size. Cambro, for example, specifies its Camwear covers for Camwear pans and lists flat, handled and notched cover options. That is a range-specific relationship, not evidence that another brand’s lid will seal on the same pan.

Decide whether the task requires access for a utensil, stacking or a specified sealing function. Request confirmation of the exact pan-and-lid pair; do not infer leak resistance from a photograph.

What else belongs in the order?

Specify the pan and lid as separate line items unless the listing explicitly supplies a set. Confirm quantity per sales unit, material, permitted use and cleaning instructions for the chosen products. A master-carton count does not necessarily mean that a single listed price buys a full carton.

For equipment with a pan well, keep the final pan layout, depths and support arrangement with the equipment quotation. Confirm what is included before arranging dispatch.
